Cauliflower in Tomato
You will need –
750 gms cauliflower broken into small pieces, 500 gms. ripe tomatoes, blanched and chopped finely, 2 tblsp. ghee, 4 cardamoms, 2 inch piece cinnamon, 4 cloves, 1 tsp. turmeric, 1 1/2 tsp. chilli powder, salt and sugar to taste, 1 tblsp. fresh grated coconut, 1 tblsp. chopped coriander leaves.
Heat ghee, add spices, then add turmeric, chilli powder and tomatoes. Fry for a while. Add the cauliflower, mix well and cook on low heat, covered, stirring occasionally and adding a little water if necessary. When partially done, add salt and sugar. When done, remove and garnish with coconut and coriander. There should be thick gravy.
