Fried Kala Chana

You will need –

  • 250 gms chana (there are two types of Chana available at the grocer’s, one is the white, big chana, and the other are smaller and brown in colour. For this preparation, select the smaller and brown variety, called ‘deshi’chana)
  • 2 tblsp. Oil
  • Salt
  • chili powder to taste
  • 1 tsp. mustard seeds
  • 3/4 tsp. turmeric
  • pinch of asafoetida

Method:

Soak the chana in water for 12 hours. Drain well. Heat the oil; add mustard seeds and asafoetida; then turmeric. Add the chana, fry and then cook on low heat, covered. Turn once in a while. When the chanas are cooked soft and become dry and start splitting, add salt and chili powder. Mix well and remove.
