Mixed Fried Rice

Ingredients (Serves 4) 

  • 2 cup Delhi rice, boiled
  • 2 eggs, beaten with salt and pepper
  • 1 tbsp soya sauce
  • 1 tbsp each of chilli sauce and tomato sauce
  • 1 tsp ajino motto
  • 250 gm peas
  • 4 green onions, finely sliced
  • 1/2 inch piece ginger, minced
  • 1/2 cup cooked shredded chicken
  • 1/2 cup prawns
  • 50 gm carrots cut into bits
  • 1 capsicum cut into matchstick like strips
  • Salt and pepper to taste

For the sauce 

  • 50 gm butter
  • 250 gm tomatoes, blanched and sliced
  • 1 tbsp chilli sauce
  • 1 tbsp cornflour mixed with 1 cup chicken stock
  • 1 small onion, minced
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • Salt to taste

Preparation

Scramble the eggs. Heat 5 tbsp oil and fry all the vegetables for 3 minutes over high heat. Add rice, spices and sauces, mix in the eggs, chicken and prawns. Cook for 2 more minutes. Serve hot.

अंडों को खुरचें। 5 बड़े चम्मच तेल गरम करें और सभी सब्जियों को तेज गर्मी पर 3 मिनट तक भूनें। चावल, मसाले और सॉस मिलाएं, अंडे, चिकन और झींगे में मिलाएं। 2 मिनट और पकाएं। गर्म – गर्म परोसें।
