Tropical Fried Bananas
You will need –
8 firm, ripe bananas (one per person), 4 tblsp. fresh grated coconut, 2 tblsp. powdered sugar, 4 cardamoms powdered, ghee for frying, 4 tblsp. cream (optional).
Peel and slit the bananas lengthwise keeping the ends intact. Mix the coconut, sugar and cardamoms and stuff the bananas with this mixture. Heat a shallow heavy pan and put some ghee in it. On a low heat, lightly fry the bananas in this pan, handling carefully, till light golden brown on all sides. Remove and serve with or without cream.
