Sooji Kheer (Semolina)
You will need –
4 cups milk, 2/3 cup sooji, 1 1/2 tblsp. ghee, sugar to taste (approx. 1 1/2 cup), 6 cardamoms, 6 to 8 almonds (optional).
Heat the ghee and fry sooji in it lightly, on low heat, to a light golden colour. Pour the milk on it stirring well. Bring to a boil and let it cook for a few minutes. Add the sugar, stir well and remove. Powder the cardamom seeds and add to the kheer. If using almonds, soak them in hot water for half an hour, then peel and make thin slices lengthwise. Add to the kheer.
