Cauliflower in Milk
You will need –
500 gms cauliflower broken into small pieces, 1 medium sized onion, 3 green chillies, 3/4 tsp. cumin seed, 1/2 tsp. turmeric (optional), salt and sugar to taste, 1 cup milk, 2 tblsp. oil, 2 tblsp. chopped coriander leaves (optional).
Heat the oil, add cumin seed, then finely chopped onion. Fry lightly. Add turmeric, then the cauliflower. Grind the chillies coarsely and add to the vegetable; along with 1 cup milk. Mix, cover and cook on a gentle heat, stirring once in a while. When almost done, add salt and sugar and if necessary, a little more milk or water. When done, the cauliflower should be moist and soft without any watery gravy.
