Kakdi Kairas/ Cucumber Pachadi
You will need –
250 gms.cucumbers, 1 tblsp. powder of roasted and peeled peanuts, 1/2 tblsp. powder of roasted til seeds (Sesame), 2 green chillies chopped; 1 lemon-sized ball of tamarind, 2 tblsp. jaggery, salt, chilli powder, 1 tblsp oil, 1/2 tsp. mustard seeds, a pinch of asafoetida, 1/3 tsp. turmeric.
Soak the tamarind in water for an hour, squeeze out the juice to make one cup of tamarind water. Peel the cucumbers and cut into small pieces. Heat the oil, add mustard seeds, chilli pieces, asafoetida and turmeric then add the tamarind water. Put in jaggery and salt and chilli powder. When jaggery is dessolved, add the peanut powder and til powder. Bring to a boil, remove and immediately ad! the cucumber pieces. Mix well.
