Mango Rice, Maangai Sadam

You will need –
2 cups rice, 1 cup grated raw mango, 3 tblsp. oil, 1 tblsp. gram dal, 3 dry red chillies, 2 green chillies, a few curry leaves, 2 tsp. mustard powder, 1/3 tsp. asafoetida, 1 tblsp. peanuts, 1 tblsp. cashew nuts (optional) salt to taste.
Cook the rice and allow to cool. Remove in a big plate or shallow pan. Heat oil. Add gram dal, peanuts, and cashew nuts bits, pieces of red and green chillies, curry leaves and asafoetida. Fry till the dal and nuts turn light brown. Remove and cool. Add the mustard powder and salt to the rice and mix thoroughly. Now add the oil mixture and grated mango and mix well again. Serve cold.
