You will need – 4 tblsp. Basmati rice soaked in water for about an hour. 6 cups milk, 1 cup (or 1 1/2 cup acc. to taste) sugar, 6 cardamoms, 6 almonds (optional).
Drain the soaked rice and grind coarsely. Bring the milk to a boil and add the ground rice stirring constantly, so that no lumps are formed. Take care that the mixture does not stick at the bottom. Boil gently till the rice is cooked and milk thickens. Add the sugar and remove when sugar is dissolved. Add powdered cardamoms. If you are using almonds, soak them in warm water for half hour, then peel and slice them in thin strips and add to the kheer. Serve hot or chilled.
