You will need –
1/2 litre milk, 1/2 tsp. curd, pinch of sugar.
Boil the milk and let it cool till it is just a little warm. If you so desire, you may remove the top cream. It is important to have the milk at the right temperature. It should be lukewarm. Add the pinch of sugar and the curd. The curd should be softened with a little milk and then added. Stir once; then cover and keep in a warm place. It should not be in too hot or too cold a place. The curds will be ready in about 5 to 6 hours time. In winter it takes longer time and sometimes it is necessary to keep the vessel in another vessel containing warm water and covered properly. In hot weather, let the milk be less hot and reduce the quantity of curd added. When the curds are set, keep in the fridge, so that it will not become sour.
