Palak (Spinach) Cutlets

You will need –

  • 400 gms palak
  • 250 gms potatoes
  • one medium sized onion
  • 3/4 inch ginger
  • 4 green chilies
  • 6 petals garlic
  • 1 tsp. amchur (dried mango powder)
  • salt to taste
  • 1 egg
  • 1 cup breadcrumbs
  • oil for frying

Method:

  1. Boil, peel and mash the potatoes while still hot. Wash and chop the palak very finely. Chop the onion and fry it in a little oil till light brown.
  2. Grind ginger, garlic and chilies together and add to the onion, and fry again. Add the chopped palak and salt, and cook uncovered, till dry.
  3. Remove, add amchur and mashed potatoes. Mix well. Divide into small orange sized portions. Roll in beaten egg and then in bread crumbs.
  4. Flatten into a cutlet shape and shallow fry till crisp and brown. Serve with tomato ketchup.
